The Test Kitchen

Well, what can I say George, Adam has done it!!  He's first ever restaurant called The Test Kitchen, Soho, London.  It has been a long hard journey......made even harder because you are not here to physcially take part and enjoy it in person....with us. BUT we all know that you know and can see what it going on...and can only hope that you can take joy in seeing it all unfold. We all got upset yesterday - his opening day - it was very emotional - you worked SO hard to help him in this for years - the hours and work you put in - but he has finally done it, mainly on his own (yes, some help from others but not as you would have done for him).  Lucy, his fiancee (you would like her George) has been a big help to him and she is so very proud of him George. It was a day that was hard, emotional, happy and upsetting, all at the same time.

It is a 'pop-up' restaurant which he has for about 12 months and he is hoping within that time that he can raise more funds and will find permanent premises to open - which he will call 'SIMMONDS'.  (The registered company name is 'Simmonds & White' obviously our own name and Dad's name).  Because this is not a permanent restaurant he has called it 'The Test Kitchen' because that is exactly what it is - testing and sampling menus for the future and to get people's feedback on it.  It is a great idea and the restaurant doesn't have tables but a long counter - which basically is a 'Chefs Table'  -  so he has to be on his best behaviour George - how do you think that will work!!??  

As usual the food was excellent and as usual he wasn't completely happy with it all but it will come - that's what the day was about - a soft opening that highlights any 'tweeking' that needs to be done and/or things changed.  We all went yesterday and we all had a lovely day and all enjoyed the food, the boys ate ALL their dinner that Adam cooked for them so it must have been good.  Liam had told his teacher on Friday that he was going to 'his Uncles' restaurant' to eat!!

Obvisouly there were other people there (it seats 23) and he was getting compliments - I had one chap, who when we were on our way out, stopped me and asked if I was 'Mama' - I said yes and he said was I proud of Adam, i don't need to say it but of course 'WE' are.  Your chest would have been so 'puffed' out!!  I hope all went well in the evening for him - and I'm sure it will be a resounding success for him - you can't help but like the food - its delicate, light, tasty and appeals to the eye before you even put it in your mouth.............but you know all this already.
